The first Hirsch expression I tasted was their Single Barrel Double Oak – an exceptional pour that did leave an impression. Since then, I’ve sampled The Horizon and The Bivouac. Let’s dive in and see how these two compare.
The Horizon
Nose: Vanilla and oak
Palate: spices, cinnamon, pepper and oak
Finish: oaky and peppery

Nose: cinnamon and vanilla
Palate: oak, baking spices and pepper
Finish: cinnamon and pepper

I’ve come to realize that cinnamon is one of my favorite notes in whiskey – and both claim to have that note. Let’s start with my least preferred of the two: The Horizon. For me, this one leaned more peppery than cinnamon. It lacked sweetness and, overall, came across as average. It’s not a bad whiskey by any means – certainly not the worst I’ve had – but it didn’t quite hit the mark falling a bit flat.
The Bivouac was a step up, though it still leaned more towards the peppery notes than anything else. There are moments when the baking spices come through, adding some welcome complexity. It’s a bit rough around the edges, but that’s likely due to its cask strength – bold, but not without bite.
Overall, these two expressions didn’t suit my palate. However, if you are curious about exploring this brand, I highly recommend looking at their Single Barrel – it’s a standout in my opinion.
