After falling in love with Redwood Empire, Emerald Giant Rye I simply had to try more from this Sonoma County, CA, Distillery. This bottle is named after the Redwood Empire Pipe Dream tree which is the 14th tallest tree on the planet. It is also amongst the fastest growing and rises 367 feet from the forest floor.
Mash Bill: 75% corn, 21% raw rye, and 4% malt barley. It is made from barrels aged between 4 and 12 years.
Nose: vanilla and pepper
Palate: vanilla, charred oak, and pepper
Finish: pepper and warming bite
ABV: 45%
Cost: $33 (what we paid in NH)
This whiskey is much bolder than the rye. It packs a punch in a bite that quickly mellows down. It’s warming, peppery and woodsy. It’s good on its own and I like it, but the Emerald Giant Rye is still the better of the two.
I also used this whiskey in an Old Fashioned and it was phenomenal. You still get some of those peppery notes with the sweetness of the simple syrup. It was so good! For me, the purchase was a win. For the price, you get a good whiskey that’s also amazing in cocktails.
