UPDATE: West Cork Barrel Proof

With St. Patrick’s Day behind us, I wanted to share an update on the West Coast Barrel Proof we picked up in 2022 and have finally polished off. Now that we’ve finished the bottle, we can give it an honest review of how it aged over time and whether it’s one we’d buy again. Time to dig in—but first, a quick reminder of the tasting notes.

Nose: fruit, malt, and sweetness
Palate: malt, oranges, and fruit
Finish: fruity and sweet with a bite
ABV: 62%
Cost: $44.99 (what we paid)
Mash Bill: 66% grain and 35% malt

When I first reviewed this bottle, I noted that it wasn’t for the faint of heart but still one I thoroughly enjoyed. And now, after finishing the entire bottle, I can confidently say my opinion hasn’t changed. This is a strong, warming whiskey, lifted by just enough fruit and sweetness to keep it balanced. I particularly enjoy it as an aperitif when I’ve overindulged at dinner. It became a reliable staple in our collection, and it’s a bottle we’d happily buy again—especially at its price.
