This is the second expression I’ve had the opportunity to sample from Still Austin. I’ll start by saying that rye whiskies aren’t typically my go-to, but I was intrigued by this one. This expression is crafted from 100% Texas-grown rye and aged for a minimum of two years.
Still Austin is a craft distillery located in Austin, Texas, with roots dating back to 2017. Founded by the father-and-son team of Cleveland and Chris Seals, the distillery operates as a true grain-to-glass facility—every step of the process, from milling and mashing to distilling, barreling, and aging, is done entirely on-site. Their grains are carefully sourced from farms throughout North and West Texas.
Nose: honey, vanilla and rye
Palate: spices, caramel, vanilla, pepper and rye
Finish: cinnamon and rye
ABV: 49.8%
Cost: $2.99 (what we paid for a 50ml; 750ml $42.99)
I’ll be honest—this one didn’t quite hit the mark for me. It opens nicely with a touch of sweetness and vanilla, but that quickly gives way to a bold rye presence, accompanied by assertive pepper and spice notes that, for my palate, overwhelm the subtler flavors. Rye lovers will likely appreciate its intensity, but it’s not my personal favorite. That said, I remain curious to explore Still Austin’s other expressions to see how they stack up.
