Dingle Distillery

With St. Patrick’s Day fast approaching, it’s time for another Irish whiskey spotlight—this time, Dingle. I’ve had the opportunity to taste their Single Malt, as well as the Lúnasa, Bealtaine, and Lá le Bríde expressions. Before we get into how they compare, here’s a little background on the distillery.

The distillery began production in 2012 and is based in Dingle, County Kerry, Ireland. Their whiskey is triple distilled, and in addition to their whiskey range, they also produce an award‑winning, quintuple‑distilled Dingle Vodka.

I tasted all four expressions listed above, but one clearly distinguished itself. I’ll center my review on that standout and then provide my notes on the remaining expressions.

Lúnasa (50.5%), Opens with berry sweetness and citrus on the nose, moves into a palate of warm spices and more berry notes, and finishes with a comforting spiced heat.

Bealtaine (52.5%), matured in bourbon and Shiraz casks, brings raisins and vanilla on the nose, followed by nutty caramel and cherry on the palate, finishing with gentle spice and light sweetness.

Lá le Bríde (50.5%), aged in bourbon and rye casks, offers honeyed caramel and fruit on the nose, a palate of spice, ginger, and caramel, and a spiced, fruity finish.

And now, the star of the lineup: Dingle Single Malt. Aged in a mix of ex‑bourbon (39%) and Pedro Ximénez sherry casks (61%) and bottled at 46.3%, this one really impressed.


Nose: fruit, lemon zest and light sweetness

Palate: fruity, vanilla, caramel, apples and baking spices (like cinnamon)

Finish: honey and spices

Cost: $75-$100 (depending on where you buy)


The Single Malt is the standout. It was the first expression I tasted, and I kept returning to it throughout the lineup. The others were solid, but this one rose above the rest. It’s approachable and fruity, with a measured sweetness that’s grounded by layers of baking spice. The depth here is impressive—enough that after sampling all four, this was the one that lingered in my mind. If you’re curious about Dingle and want to start with just one bottle, I highly recommend the Single Malt. It delivers!
