Cheers to new beginnings! 2026 is here, and I’m thrilled to start the year with something new to me—a brand I’ve never featured before: The Whistler Irish Whiskey. Although I’ve featured Boann Distillery before, I’ve never reviewed The Whistler until now. For those who may not know, this whiskey is crafted by Boann—a family-owned distillery founded in 2019 by Patrick and Marie Cooney.
Dark Symphony is a blended whiskey finished in French Cognac V.S.O.P. barrels. Its unique character comes from New Era Oak Casks (N.E.O.C)—premium French wine barrels that are hand-shaved, re-toasted, and reborn to create something extraordinary. Ready to taste? Let’s dive in.
Nose: fruit, zest and cloves
Palate: fruit, toasted oak, and spices
Finish: spices and very light finish

This expression stands out for its light and balanced profile, making it exceptionally approachable. The flavors are well-integrated—noticeable yet subtle—creating a smooth and easy-drinking experience. It’s an ideal introduction for those new to whiskey, offering complexity without overwhelming the palate. While it may not deliver dramatic intensity, its harmony and drinkability are impressive.
