If you’ve had Dalmore’s 12 Year from their core collection and you enjoyed it, well, say hello to their 12 Year Sherry Cask. Now, I understand that if you’ve had the original, you might be thinking, ‘Wait, wasn’t the original also finished in Oloroso Sherry Casks?’ And you would be correct. However, this expression is finished casks which previously held three different styles of Sherry, which accounts for the difference in the expression and off-course the flavor.
This Sherry Cask is initially matured in American white oak ex-bourbon barrels. The whisky is then finished in casks that previously held a unique sherry created for Dalmore, a blend of aged Oloroso Sherry and rich sweet Pedro Ximénez Sherry.
Nose: sweet, ginger and honey
Palate: chocolate, almonds and lightly sweet
Finish: vanilla, cake, and lemon
ABV: 43%
Cost: $70-$80
While the original 12 Year expression showcased prominent dried fruit notes, this expression takes a departure from that profile and instead emphasizes flavors of chocolate, almonds, and subtle hints of vanilla which are cake-like.
This expression offers a sweeter profile, but it’s not too overpowering. The sweetness is balanced with notes of almonds and a touch of lemon. Personally, I find this version to be even better than the original. It’s a more refined and sophisticated version that is easy to drink. This upgrade delivers and is worth the sample.
